Our Food & Drink Ethos At The Birch
Here at The Birch we are not only passionate about the food we serve but also passionate about what ingredients go in to making our tasty dishes.
Food & Drink That Does Good & Taste’s Great!
We have championed the use of local produce for decades. Surrounded by amazing farms, our chef’s devise menus showcasing the best Bedfordshire/Buckinghamshire and their neighbouring counties have to offer.
Our menus change throughout the year so that our chef’s can ensure that only the freshest ingredients, bursting with flavour, are used in our stunning starters, mouth-watering mains and delectable desserts.
Locally-Sourced Savouries
From tasty steaks and burgers to our delicious Sunday roasts, we source our meat from Mimram Valley Butchers, Peterborough Game and The Meat Shop. All independent butchers, whose meat, game and poultry is free-range and reared in Hertfordshire and Bedfordshire pastures, such as lamb from Tewinbury Farm, who proudly ensure the highest welfare standards are maintained.
Our fish comes from independent family-owned GCH Fishmongers, based in Bedford, and is affiliated to many of the bodies representing the industry – focused on sustainable sourcing, diversity and fishmongery skills.
Our seasonal fruit and vegetables are from Collins Fresh Produce, based in Northampton. They believe in supporting hard-working British farmers and offering fresh seasonal produce at it’s best.
Sinfield Fruiterers, a Bedford-based family-run fruit and vegetable business with over 100 years experience, also provide our chefs with fresh, quality produce that help make our dishes so delicous!
Discerning Desserts
Our artisan cheese is made by English farmers which we use in many of our dishes or served with Hertfordshire honey – made by local bees! – on our tasty Cheese Board.
The ice creams that accompany our delicious homemade desserts are produced by Noel’s of Warwickshire, who are a small family-run company based in Caldecote Village. They have gone to great lengths to create a collection of luxurious sorbets, gelatos and ice creams that offer quality true-to-name flavours.
Sustainability With Every Sip!
At The Birch the beverages we serve are just as important as the dishes they accompany. That’s why we focus on offering brands that champion sustainability.
Our tea is from Teapigs and our coffee from local roasters Wooden Hill, both environmentally conscious companies producing ethically sourced and sustainable products.
We work closely with our supplier Ellis Wines to offer a fantastic range of organic and biodynamic wines – this is wine made with a spiritual-ethical-ecological approach to farming, using all components of the vineyard as one whole entity, eliminating the use of chemicals and using natural materials and composts.
We serve BELU Natural Spring Water, which is carbon-neutral and ethically sourced bottled water that donates its profits to WaterAid.
Our Continued Commitment
As a family with children and grand-children of our own, we will not stop looking at ways to help towards a healthy planet for their future and have made it our mission to continually look at how to reduce our carbon footprint wherever possible, whilst still delivering the quality fresh food and high standard dining experience we’re proud to offer.
